Smoked Trout With Sprouted Leek

INGREDIENTS FOR 2 PEOPLE:

  • 200 gr sliced smoked trout
  • 2  handfuls sprouted leeks
  • 30 ml (2 tbsp.) Honey Vinegar
  • 45 ml (3 tbsp.) grapefruit juice
  • 60 ml (4 tbsp.) olive oil
  • 5 ml (1 tsp.) chopped fresh herbs
  • 5 ml (1 tsp.) liquid honey
  • Salt and pepper

DIRECTIONS

Rinse and drain the sprouted leek germs.

Place the smoked trout slices on a plate and refrigerate while you prepare the next step.

Prepare the vinaigrette dressing by mixing the remaining ingredients.

Just before serving, sprinkle the smoked trout and sprouted leek with the dressing.

Decorate with red-coloured berries.
